Anhydrous, monohydrate and dihydrate materials differ in water content and mass basis. Product names on the sample, specification and quotation should identify the same form; equal weights of different hydrates are not automatically equivalent.

Compare pH after mixing and after the actual heating or holding step. In mineral- or protein-containing foods, also observe sediment, separation and texture under the same conditions.
