Compare performance in the actual protein system
Describe the system: State the meat or seafood type, brine composition, addition sequence, mixing or tumbling conditions, cooking/freezing steps and destination market.
Observe in a controlled trial: Compare a control and the current ingredient under the same process. Observe dissolution, texture, cooking or thaw losses and sensory changes; agree how the trial relates to the commercial grade.
A trial informs selection for that material and process; it is not a guarantee for a different grade or future batch.
STPP: what to ask next.
Is the phosphate content the same as STPP assay?
Not necessarily. Ask which analyte and calculation basis each figure represents, then compare like with like. Do not substitute one expression for another in an order specification.
Can I replace SHMP with STPP on equal weight?
A shared phosphate family does not establish equivalent function. Compare mineral interactions, water management, dissolution and finished-food results in the same recipe before agreeing a substitution.
What should accompany a sample request?
Name the proposed food-grade material and source, process conditions, target outcome and requested specification. Ask how the sample grade and documents will correspond to a commercial offer.
